Risotto al Cacio e Pepe

This delicious "cheese and pepper risotto"  is really easy to make and only requires 5 simple ingredients.

Step 1

Toast the Pepper and Rice

Use a combination of butter and olive oil for the best flavor. It only takes 2 minutes to lightly toast the rice.

Step 2

Add Simmering Water in Stages

Add water 1 cup at a time. You don't have to stir constantly! Just enough to keep the rice from sticking.

Step 3

Stir in the Grated Parmesan

Grated pecorino is more traditional, but I prefer the more umami-forward cheesy taste of parmesan. 

Step 4

Serve with Extra Black Pepper

Always use freshly ground black pepper, especially when it's one of only 5 ingredients in the entire recipe.
