Tomato and Mascarpone Risotto

Step 1

Sauté onion & tomato paste

Then add the Risotto and cook for 1-2 minutes. Just until the rice starts to stick to the pot.

Step 2

Add Hot water, little by little

Have a pot of lightly-salted water ready and simmering on a separate burner.

Step 3

Stop when the risotto is soft enough to eat

This takes about 25-30 minutes and 5-6 cups of water

Step 4

Add Fresh Tomatoes and Mascarpone

Adding these at the end keeps the risotto tasting bright and fresh.

Serve with basil, Fresh tomatoes, & mascapone
