Creamy Rosé Spaghetti with Pancetta, Shallots and Sage

This recipe is perfect. It's a one-pan recipe, has just 6 ingredients, and the pasta cooks IN THE ROSÉ.

Step 1

Fry some Pancetta, Shallots, and Sage until Caramelized. 

The pancetta cooks first, then shallots and sage fry in the rendered pancetta fat.

Step 2

Remove the Shallot Mixture and add a whole bottle of Rosé wine.

The wine deglazes the pan's fond from the shallots, and also becomes the pasta cooking liquid.

Step 3

Once Cooked, add the Mascarpone and Top with the Pancetta Mixture

The Mascarpone makes the dish creamy and balances out the acidity of the wine
