Easy Vegetarian Pasta 

Red Wine & Mushroom Tagliatelle

A 30 minute Mushroom Pasta without cream, but with lots of delicious red wine. 

Step 1

Sauté Two Types of Mushrooms

For the best browning use high heat and don't add salt until the mushrooms are golden brown.

Step 2

Add Shallots, Thyme, & Tomato Paste

Saute until the tomato paste sticks to the bottom of the pan.

Step 3

Deglaze with LOTS of Red Wine

Simmer the mushrooms in the wine until the sauce has reduced by half, 8-10 minutes.

Step 4

Add Butter for a Glossy Finish

This step may seem unnecessary, but you'll notice a huge difference in texture one you add the butter.

Step 5

Add the Cooked Tagliatelle

The bets part is that the pasta finishes cooking at the same time as the sauce!

Step 6

Toss it all Together

Your Red Wine Mushroom Pasta is done! You can add a splash of pasta water if it dries up, but it may not need it.
