Lemon Arugula Pasta Salad with Walnuts & Parmesan

Step 1

Make the Lemon Dijon Dressing

Lemon, Dijon, white balsamic, and capers create a complex acidic combination which is balanced out by walnuts, parmesan, and olive oil.

Step 2

Toss in the Cooked, Rinsed Pasta

Rinsing the pasta is a must for pasta salads. Excess starch will thicken the dressing too much and make the salad seem dry.

STep 3

Toss in LOTS of Arugula

The recipe calls for 3.5 oz of arugula, which initially looks like too much, but wilts a lot and ends up being perfect.
