Lemon Arugula Pasta Salad with Walnuts & Parmesan
A delicious recipe to make over and over again using common pantry staples.
Make the Lemon
Lemon, Dijon, white balsamic, and capers create a complex acidic combination which is balanced out by walnuts, parmesan, and olive oil.
Toss in the Cooked, Rinsed Pasta
Rinsing the pasta is a must for pasta salads. Excess starch will thicken the dressing too much and make the salad seem dry.
Toss in LOTS of Arugula
The recipe calls for 3.5 oz of arugula, which initially looks like too much, but wilts a lot and ends up being perfect.
The Best Part... Mangia!
Lemon Arugula Pasta Salad is delightful on its own but also makes a hearty vegetarian side dish to simple grilled meats, chicken cutlets, and much more.
