Description

An easy, delicious, refreshing side dish thats loaded with color and nutrients.


Ingredients

  • Three bell peppers: 1 green, 1 red, and 1 orange OR yellow, thinly sliced
  • 1 jalapeño, thinly sliced
  • 1/2 of a red onion, thinly sliced
  • 1/2 cup of cilantro, coarsely chopped
  • The juice of 1 and a half limes
  • 3 tablespoons of olive oil
  • 2 teaspoons of kosher salt
  • 1/2 teaspoon of freshly cracked black pepper

Instructions

  1. Place the thinly sliced peppers and onions in a large mixing bowl.
  2. In a small bowl make the cilantro lime dressing by combining the chopped cilantro, olive oil, lime juice, salt and pepper.
  3. Add the dressing to the pepper mixture and toss to combine.
