Description
This Shrimp Mango and Avocado Salad is the perfect simmer dish to make for friends. It's incredibly fresh and has delicious toppings such as crunchy diced peanuts and a delicious cilantro lime dressing.

For the Shrimp
- 1 lb shrimp, raw, tail-on
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1 tablespoon olive oil
For the Cilantro Lime Dressing
- The juice and zest of 1 lime
- 1/4 cup olive oil
- 1 teaspoon agave
- 1/4 cup chopped cilantro
- 1-inch piece of ginger, grated
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For the assembly
- 2 mangos, cut into slices
- 2 avocados, cut into slices
- 2 Persian cucumbers, cut into round slices
- 1/2 cup roasted salted peanuts, finely chopped
Instructions
- In a medium bowl, combine the shrimp, 1/2 teaspoon of each- salt pepper, cayenne, paprika, dry oregano, and and chili powder, and 1 tablespoon of olive oil. Toss to coat the shrimp
- Grill shrimp on a grill or stovetop griddle over medium-high heat for 3 minutes on each side, or until fully cooked. Set shrimp side.
- Make the cilantro lime dressing by whisking together the olive oil, lime, agave, cilantro, grated ginger, salt and pepper.
- On a large platter, plate the sliced cucumbers, mangoes, avocados, and grilled shrimp. Top with diced peanuts and the cilantro lime dressing. Enjoy!
