Description

This Shrimp Mango and Avocado Salad is the perfect simmer dish to make for friends. It's incredibly fresh and has delicious toppings such as crunchy diced peanuts and a delicious cilantro lime dressing.


Ingredients

For the Shrimp

  • 1 lb shrimp, raw, tail-on
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1 tablespoon olive oil

For the Cilantro Lime Dressing

  • The juice and zest of 1 lime
  • 1/4 cup olive oil
  • 1 teaspoon agave
  • 1/4 cup chopped cilantro
  • 1-inch piece of ginger, grated
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the assembly

  • 2 mangos, cut into slices
  • 2 avocados, cut into slices
  • 2 Persian cucumbers, cut into round slices
  • 1/2 cup roasted salted peanuts, finely chopped

Instructions

  1. In a medium bowl, combine the shrimp, 1/2 teaspoon of each- salt pepper, cayenne, paprika, dry oregano, and and chili powder, and 1 tablespoon of olive oil. Toss to coat the shrimp
  2. Grill shrimp on a grill or stovetop griddle over medium-high heat for 3 minutes on each side, or until fully cooked. Set shrimp side.
  3. Make the cilantro lime dressing by whisking together the olive oil, lime, agave, cilantro, grated ginger, salt and pepper. 
  4. On a large platter, plate the sliced cucumbers, mangoes, avocados, and grilled shrimp. Top with diced peanuts and the cilantro lime dressing. Enjoy!
