Description
This Tuna Pasta Salad is a pantry meal at its finest.
Ingredients

- 6oz pasta (measured dry), cooked and rinsed
- 1 14 oz can of chick peas, drained and rinsed
- 1 can of tuna, drained
- 1 can artichoke hearts, drained
- 1/4 cup red onion, diced
- 1 jalapeno, diced
- 1/2 cup tomatoes, diced
- 2 Tb olive oil
- 1/4 cup of vinegar (nee note 1)
- Salt and pepper for seasoning
Instructions
- Place the first 7 ingredients in a large bowl.
- In a measuring cup, whisk together the olive oil, vinegars, a large pinch of salt, and freshly cracked black pepper.
- Pour dressing over the pasta salad and toss to combine. Taste for seasoning and add salt if needed.
Notes
Note 1: PRO TIP- Use 2 types of acidity when making salad dressing. The combination of two types of acid cuts the bitterness and increases the flavor.
