- Your favorite blue cheese
- Creme fraiche
- Plus enough water to turn it into a dip/dressing (2-3 tablespoons) and a pinch of salt.

Moreover, creme fraiche is one of those ingredients I could eat by the spoonful. It's so creamy but has more to it than just creaminess. It also offers really flavorful acidity, like sour cream but smoother.
How to make Chunky Blue Cheese Dressing
It helps to have a scale to weigh your blue cheese. If you don't have a scale, you can eyeball it based on how large the piece is that you purchased.
- In a medium bowl combine 4oz blue cheese (use the softer, inner part if possible), ½ cup creme fraiche, and 2 Tb water
- Mash, stir, and fold until well-combined. If it gets really hard to stir, add 1 more tablespoon of water and mash and stir some more. Do this until it resembles a paste.
This chunky blue cheese dressing is supposed to be thick and paste like; NOT runny. I firmly believe there's nothing worse than a loose runny blue cheese dressing with a few chunks of blue cheese here and there.

Ingredients
- 4 oz blue cheese, hand-crumbled
- ½ cup creme fraiche
- 3-5 Tb water
- Salt to taste
Instructions
- Place creme fraiche, blue cheese, and 3 Tb of water into a bowl or food processor.
- Mash and stir with a fork, or blend if using a food processor, until a thick paste forms but a lot of chunks are still visible. Add more water, 1 Tb at a time, to thin the dressing out if needed.
- Season with salt to taste.

Hint: Combining the blue cheese and the creme fraiche is a LOT easier if they're both at room temperature. About half an hour works. Nothing is going to go bad here. I wouldn't consider using a food processor because you won't get those yummy chunks.
